INGREDIENTS:
300g rolled oats
100g nuts (walnuts, pecans, almonds or hazelnuts), chopped.
20g shredded coconut
50g brown sugar
120g chocolate chip
1tsp ground cinnamon
70g raisins
zest from 1 lemon
1 large banana
1 egg
3tbsp coconut oil
160g plain yogurt
1g salt
- Combine all dry ingredients (oats, nuts, shredded coconut);
- Add brown sugar, cinnamon, raisins, chocolate and lemon zest.
- In a small bowl puree the banana using a fork. Add egg, coconut oil and yogurt. Stir to combine.
- Add wet ingredients over the dry mixture and mix until well combined.
- Scoop mixture onto prepared cookie sheets. Slightly flatten the tops into desired thickness as they will not spread in the oven.
