HEALTHY COOKIES ROLLED OATS AND CHOCOLATE





INGREDIENTS: 

300g rolled oats
100g nuts (walnuts, pecans, almonds or hazelnuts), chopped.
20g shredded coconut
50g brown sugar
120g chocolate chip
1tsp ground cinnamon
70g raisins
zest from 1 lemon
1 large banana 1 egg 3tbsp coconut oil 160g plain yogurt 1g salt


STEPS:

- Combine all dry ingredients (oats, nuts, shredded coconut);





- Add brown sugar, cinnamon, raisins, chocolate and lemon zest.
- In a small bowl puree the banana using a fork. Add egg, coconut oil and yogurt. Stir to combine.
- Add wet ingredients over the dry mixture and mix until well combined.


Scoop mixture onto prepared cookie sheets. Slightly flatten the tops into desired thickness as they will not spread in the oven.


- Bake for 15-20 minutes until lightly golden. Allow to cool on a cool rack before serving.
